Patali Gur has a firm, slightly granular texture with a deeply fragrant, smoky-caramel sweetness that dissolves beautifully when stirred into warm milk, curries, or sweet preparations. It is the traditional form in which Bengali cooks have used Nolen Gur for centuries ? grated or broken into pieces as needed.
